It's in Castelnaudary, France, that we prepare this Toulousan "tomaté" cassoulet according to a traditional recipe. We cook the sausages and beans from France in a broth whose family recipe has been kept secret for 3 generations.

Cassoulet with duck confit
Following a traditional recipe, Maison Rivière produces a generous, gourmet cassoulet that reflects the region and its people. To the melting beans simmered in a fresh vegetable broth are added duck confit and Toulouse sausage made in our workshops with pork from France.

Cassoulet with pork confit
Cassoulet, an authentic dish that is a guarantor of Castelnaudary's culinary heritage and emblematic of the town, is both the spearhead of our House and its first guarantee of quality.
Made by hand, Cassoulet Frais de la Maison is composed of lingot beans simmered in a fresh vegetable broth for which only Madame Rivière mère holds the recipe, to which pork shanks and Toulouse sausages are added. The Toulouse sausages are made and grilled in our own kitchens. We use 100% French pork.
Fresh Cassoulet is served in its cassole (the dish from which cassoulet takes its name).
